Tex-Mex Bisquick Cheeseburger Pie Recipe

The original Bisquick Cheeseburger pie recipe sends me straight back to my childhood.  It was a staple on the dinner table at least once a week.  It was cheap, quick and filling.  But … boring.  I have taken the original and spiced it up a bit with my favorite Tex-Mex flavors.  Be creative with the toppings and it’s a different meal every time!

Step 1:

Cook the ground turkey.  I prefer the extra lean ground turkey, but feel free to use ground beef.  Totally up to you.

I will sprinkle a little salt and pepper on the ground turkey during this step.  Ground turkey doesn’t have a bold flavor, so I layer the seasonings on with each step.

Step 2:

Following the package instructions, add the taco seasoning.  I prefer the lower sodium version, but you can use traditional, spicy or your own combination of spices.  We want the ground turkey to be full of those wonderful Tex-Mex flavors!  While it’s simmering I add the chopped pepper.

Step 3:

Meanwhile, I am combining the Bisquick, milk and eggs until smooth in a small bowl.  I use a whisk because I want the mixture to be smooth with no lumps.

Step 4:

Pour the turkey mixture into a lightly oil sprayed 9 inch pie plate.  This will keep the “pie” from sticking.

Step 5:

Add the cheese in a single layer over the turkey mixture.

Step 6:

Pour the Bisquick mixture evenly over the entire pie.

Step 7:

Bake in a 400 degree oven for 25 minutes; or until a knife inserted in the middle comes out clean.  I let the pie cool for a few minutes for slicing and serving.  The resting time allows the pie to set and hold its shape.

Step 8:

I serve each slice topped with my favorite Tex-Mex toppings.  You can add:  sour cream, diced tomatoes, sliced avocado, jalapeño peppers or salsa.

Ingredients:

1 pound ground turkey; extra lean

1 bell pepper; chopped.  Use your favorite color, here I had an orange one on hand.

Salt and pepper to taste

1 package taco seasoning

1 cup shredded cheese; I used the Mexican finely shredded version

1/2 cup Bisquick; I prefer the HeartSmart version

1 cup skim milk

2 eggs

 

Original Recipe:

Should you want to make the original.  Omit the taco seasoning and pepper.  Cook the turkey with 1 cup of chopped onion instead.  Use regular cheddar cheese.
