Citrus Shrimp has a light sauce that is flavored by simple ingredients and served over rice and a vegetable, it makes a very satisfying dinner.
First, start with about a pound of shrimp. If you don’t have access to fresh, feel free to use frozen. Here we thawed frozen jumbo shrimp, removed the shells and deveined them.
Lightly season the shrimp with salt and pepper. It is important to season your food with each step.
Melt butter in a skillet and saute the shrimp in the butter.
Squeeze the juice of one lime and one lemon into the skillet once the shrimp begin to change color.
The shrimp will be done once they have turned a nice light pink. Be sure not to over cook, as shrimp will become tough and chewy – not a texture you want.
The butter, lime and lemon juices create a very nice, delicate sauce.
Serve the shrimp over rice, with a drizzle of the sauce over top. This pars nicely with a vegetable of your liking.
If you have someone who is watching their carbs, this dish can be served with just the shrimp (drizzle a little of the sauce over the shrimp) and a vegetable.
1 pound shrimp, shelled and deveined
