Cream Cheese Chicken Stuffed Peppers

    Ingredients
    • 2cups chickencooked and shredded or diced
    • 8ounces cream cheesesoftened; room temperature
    • 4ounces monterey jack cheesegrated
    • 4ounces cheddar cheesegrated
    • 1 jalapenominced
    • 2teaspoons ground cumin
    • 1teaspoon salt
    • 1/4cup salsa
    • 4 bell peppers
    Instructions
    1. Preheat oven to 350 degrees
    2. Slice peppers in half and remove the seeds and membrane. Place in a baking dish. I used a 9 x 13.
    3. Add chicken, cream cheese, cheeses, jalapeƱo, cumin, salt and salsa to a medium bowl and stir well to combine.
    4. Spoon chicken mixture evenly into each halved pepper.
    5. Cover tightly with foil and bake for 40 minutes.
    6. Serve immediately.
