Tropical Meatballs

I love wandering through the big warehouse stores during tasting time.  They offer tastings of foods you probably would never buy, unless you tried them.  Well, this recipe, Tropical Meatballs, was created because I bought some of those meatballs I tasted.  Of course, after I got home, I looked at them and thought … now what?

Here are the meatballs I bought.  They are Hawaiian Chicken meatballs and can probably be found in any grocery store and warehouse store.

Tropical Meatball Recipe

Step 1:

Cook meatballs according to package directions.  These are pre-cooked and only needed to be warmed up.

Step 2:

Add mangos, pineapple and half of the juice from the pineapple.

Step 3:

Simmer until the mangos and pineapple are warm.

Step 4:

With the remaining pineapple juice, add cornstarch and make a slurry.  This will thicken the sauce.

Step 5:

Serve – I serve over rice to complete the meal.

Ingredients:

1 package Chicken Meatballs  – Hawaiian Style.  The package from the warehouse store contains two packages, I only used one.  The other was frozen for another day.

1 can diced mangos – drained

1 can pineapple tidbits – reserve the juice

Prepared rice
